Chili Cook Off Rules


  1. No ingredient may be pre-cooked prior to the start of the cook off.
  2. Exceptions to rule one are: canned or jarred tomatoes, sauce, peppers, beverages and broth
  3. Spices may be ground and/or mixed ahead of time
  4. Meat may be pre-cut or pre-ground, but must NOT be pre-cooked
  5. No exotic meats.  Meats must be USDA approved, packaged meat.
  6. Chili must be prepared in the open, in full view of staff and audience
  7. Packaged Chili mixes are NOT allowed (packaged spices are)
  8. Cook teams must make a minimum of 2 gallons of chili
  9. Cooking period will be 3 hours, beginning at noon and ending at 3pm.
  10. Cook teams may use as much or as little of the allotted time as desired
  11. No public samples until after judging is complete
  12. Cook teams are responsible for supplying all of their own ingredients, supplies and equipment.  (Heat source may be provided if necessary and if pre-arranged)
  13. Chili categories are:

  14. a.  Red Chili:  Any combination of meat(s) and other ingredients with Red Chili peppers.
    b.  Chili Verde:  Any combination of meat(s) and other ingredients with Green Chili peppers.
  15. Decision of the judges is final
  16. Cook teams will be given an official bowl to fill for judging. The bowl must be used as is, without altering or marking in any way.
  17. Contestants may be required to taste their own chili before filling the judging bowl, at the judges’ discretion
  18. Cook teams are required to meet County Health standards for their booth. County Health Officials will be present to inspect for code compliance.   Booklets outlining the requirements are available from DTC Promotions, Inc. by calling 412-7112
  19. Requirements include:

  20.     -- 3 sink setup (buckets may be used) for washing utensils  
         -- Hand washing setup (insulated jug with spout may be used - see booklet)
         -- Cook teams will be required to sign that they have received the Safety Booklet
